Ruby port and whole egg shaken into a rich, gently spiced nightcap.
Taste: red fruit · silky egg · fresh nutmeg

7.5ml
Pasteurized whole egg
one small egg

How to make it
Add the port, demerara syrup, and pasteurized whole egg to a shaker without ice and shake firmly.
Add cold ice and shake again until glossy, chilled, and well aerated.
Fine strain into a chilled coupe and grate a restrained layer of nutmeg over the top.
