Ingredients
Cognac and a whole egg shaken into a silky, nutmeg-scented nightcap.
Taste: warm grape · soft custard · fresh nutmeg

Rich simple syrup
7.5ml
Pasteurized whole egg
1 medium egg
45ml
How to make it
Dry shake all ingredients without ice to combine the egg completely.
Add cold ice and shake again until chilled and silky.
Fine strain into a chilled coupe and grate a little nutmeg over the foam.
