Ingredients
Whiskey, lemon, egg yolk, and soda in a rich historical fizz.
Taste: whiskey spice · lemon curd · soft nutmeg
Rye or bourbon whiskey
60ml
Fresh lemon juice
25ml
Demerara syrup
10ml
Pasteurized egg yolk
raw egg; use only pasteurized egg
15ml
Soda water
60ml
How to make it
Dry shake the whiskey, lemon juice, demerara syrup, and pasteurized egg yolk without ice.
Add cold ice and shake again until chilled, glossy, and fully emulsified.
Fine strain into a chilled fizz glass, top slowly with soda water, and grate a little nutmeg over the foam.
