Old Tom gin, citrus, and egg white under a clean cap of soda.
Taste: soft juniper · bright citrus · silky foam

Fresh lemon juice
15ml
Simple syrup
15ml
Soda water
60ml
How to make it
Dry-shake the gin, egg white, lemon, and syrup, then shake again with ice.
Fine strain into a chilled fizz glass and slowly top with soda.
Set a thin lemon coin against the foam.
