Ingredients
Old Tom gin, lemon, and soda in a bright nineteenth-century highball.
Taste: soft juniper · fresh lemon · lively soda
Old Tom gin
60ml
Fresh lemon juice
25ml
Simple syrup
10ml
Soda water
90ml
How to make it
Shake the gin, lemon, and syrup with cold ice.
Strain into an ice-filled Collins glass and top with soda.
Lift once with a spoon and finish with a thin lemon wheel.
