Boothby's 1908 printing preserves the New Orleans brandy serve. Our house version keeps that older Cognac center rather than silently replacing it with rye.

Cognac, Peychaud's bitters, sugar, and an absinthe rinse with bright lemon oil.

How to make it
Rinse a chilled old-fashioned glass with the absinthe and discard the excess.
Stir the Cognac, syrup, and bitters with cold ice until silky and properly diluted.
Strain into the prepared glass without ice, express a lemon peel over the surface, and place it on the rim.
