A compact rum sour from 1917, softened by a clean white foam and just enough grenadine to round the lime without hiding it.

Ingredients
Rum, lime, grenadine, and egg white in a bright pink pre-Prohibition sour.
Taste: fresh lime · soft pomegranate · light rum
Lightly aged white rum
45ml
Fresh lime juice
15ml
Grenadine
7.5ml
Pasteurized egg white
22.5ml
How to make it
Add all ingredients to a shaker without ice and shake firmly to build a fine foam.
Add cold ice and shake again until the drink is thoroughly chilled.
Fine strain into a chilled coupe and express a small lime zest over the foam.
