Ingredients
Scotch, citrus, egg white, absinthe, and soda in a long, aromatic fizz.
Taste: malted grain · bright citrus · soft foam · anise lift
Blended Scotch whisky
45ml
Fresh lemon juice
15ml
Fresh lime juice
15ml
Simple syrup
15ml
Pasteurized egg white
30ml
Absinthe
1 small dash
1ml
Soda water
60ml
How to make it
Dry shake everything except the soda to begin building a fine foam.
Add cold ice and shake again until fully chilled.
Fine strain into a chilled fizz glass, top slowly with soda, and express a lemon peel over the foam.
